COMPETITION RULES CLASSIC PIZZA

PIZZA WORLD CHAMPIONSHIP CHINA DIVISION 2017

 

1. At the China Pizza Championship 2017 – organized by Pizza New Spa, in cooperation with the magazine “Pizza e Pasta Italiana” and Shanghai UBM Sinoexpo,

may participate all candidates. The participants must be at least 16 years of age.

2. The registration to the competition is open from January 2017 until all AVAILABLE PLACES ARE TAKEN. Registrations are closed 20 days prior the

competition. The competition will be on Thursday March,30th , in order to enroll:

and they will be valid only when all personal data are given.

3. All participants of the baking classes should be at Shangai UBMSinoexpo at 9.00 of the same day of the competition and return to the secretary for the

enrolment and to withdraw the competition number.

4. The competitors may wear their own organization or group uniforms or even the uniforms of their own pizzerias but they may not advertize brands other than

those present during the Championship. A hat and an adequate uniform are suggested. No companies’ brands on participants’ uniforms are admitted.

5. The theme for the Championship of the gastronomic category is “Fantasy Pizza”. Pizzas will be judged by a panel of judges on PREPARATION, TASTE,

BAKING. Dessert pizzas and focaccia bread are excluded from the competition.

6. “Classic Pizza” category is to be duelled only on electric oven.

7. Each competitor will use his/her products. The organization will provide only the tools normally used and the mixer for those who want to make the dough on

the spot the day before the competition. An official of the Pizza World Championship will monitor so that each competitor, once his/her division is over, removes from the preparation room all the work tools, ingredients and all the personal material, and thoroughly clean the space used. Those who do not abide by this disposition will be disqualified

without appeal. When the judge gives the go ahead, the competitor will make his/her pizza, he/her will show it to the jury on their presentation plate (within a maximum time of 15

minutes for "Classic Pizza”. During the competition, the competitor will occupy his own position to the oven and will not move until his pizza is ready. Each pizza

is then cut into pieces and given to the jury for tasting. Each pizza presented during the competition must be submitted directly by the applicant, any helper will

not be able to talk to the jury and also must wear the work uniform. It will be possible to accompany each pizza with an appropriate drink, but will be strictly

prohibited from offering small gifts or mementos to the Jury or from preparing the jury’s table by using any cutlery or tools, will be disqualified.

8. The judges will award points on a scale of 1 to 100 for each requested skill. The points given by each judge will be added together and the total will determine the

11. The Organizers reserve all publicity and image rights regarding the contestants of each category for one year and the unlimited use of photographic and other

material without any obligation to the contestants.

According to Law 196/03, the competitor with the inscription gives consent to the processing of personal data and image provided part of the "China Pizza Championship

2017”, which will be judged in the manner most appropriate for the promotion the event itself and the product pizza in general, by the Organization PIZZA NEW SPA. The

owner of the personal information provided is the company PIZZA NEW SPA located in Caorle (VE) - Italy, in Via Sansonessa n. 49.

 

First place, second place and third place will be awarded with 2017 Shanghai Selections Pizza Word Championship Cup. First place of Chinese nationality will win the opportunity to participate at 2017 Pizza World Championship  in Parma on 8th-10th May 2017 (Free of charge: registration fee, round trip ticket, accommodation)

 

INTRODUCTION

26 YEARS OF PIZZA WORLD CHAMPIONSHIP

 

The oldest, most enduring and international worldwide competition for pizza-makers will be back to Parma (Palacassa, Fiere di Parma) the 8, 9, 10 of May 2017.

12 000 pizza-makers met and challenged, more than 25 000 pizzas baked since 1992, birth year of the first Pizza World Championship

One generation grew up with water, flour, tomato and mozzarella, being witness of the evolution of one of the most appreciated Italian dish.

The Pizza World Championship gone through 26 years of our recent history, interpreting radical changes and small revolutions that have influenced our lifestyle, including pizza and pizza makers.

Over the years, the professionalism of the pizza makers has grown enormously and the pizza has become, finally, and deservedly, synonymous with research and haute cuisine, also declined in alternative gluten free, vegetarian and vegan pizzas.

More and more the female approaches to this profession, with a slow but steady growth: 1991-2016 the women pizza-makers have more than doubled and now account for 12% of the class.

Even if the love for this main dish remains unchanged, the way to perceive it is changing firstly thanks to the worldwide web and then to the cooking TV shows and series. This programs brought people to foster more and more interest on flours, dough, mozzarella and tomato.

This development is also the result of the great movement of information and international events like the Pizza World Championship, which brought the culture of real Italian pizza also outside the national borders.

The timing of pizza with mayonnaise and ketchup fortunately seem to be winding down: today even in London, Berlin, New York and Shanghai you can find a real Neapolitan pizza, cooked in a wood oven and artfully prepared according to tradition, perhaps by a non Italian pizza-maker.

The Pizza World Championship 2016 involved nearly 40 countries (Italy, USA, France, China, Australia, Japan, Brazil, Thailand, Mexico, Canada, Germany, UK, Russia, Poland, to name a few), with more than 690 competitors and almost 7000 visitors.

This International notoriety is due also to the great success of the Pizza World Tour: an international process of selections of the best pizzaiolos all over the world organized in cooperation with the most important and largest world’s food and technology exhibition.

The year 2017 will celebrate the 26th year of the event and will be filled with many new features: 4 themed areas dedicated to specific recipes of pizza and pasta dishes, 11 specialties including cooking and skills competitions, and above all, a great opportunity to see gathered more than 690 pizza chefs in action and the best pizzas in the world in a single event.
